Wisconsin in its terroir and Italian in its heart, BellaVitano’s elegant flavor profiles are unique in the world of cheese.  This premium cheese features a unique amalgamation of Parmesan and Cheddar flavors with a creamy Cheddar texture.   This cheese is hand-rubbed with Italian espresso.   Ed Hamilton and I filmed a show for my Internet series, CHEESE RULES pairing this complex cheese with this same complex rum from Martinique. The pairing is really a match made in heaven.

Holland’s Family Farm – Thorp, Wisconsin
Cheesemaker – Marieke Penterman
Raw Milk Foenegreek Gouda – Cow
This handmade farmstead Gouda is made from Marieke’s traditional Dutch recipe with their family farm’s fresh raw cow’s milk.   This cheese is then aged on Dutch pine planks four to sixmonths to develop a creamy, nutty flavor.  Aging makes Holland’s Family Farm Goudas very different from most American Gouda-style cheeses, which are usually sold very young.  Marieke’s Foenegreek Gouda won best in class at the 2007 US Championship Cheese Contest.
