Ingredients:
- 1 pound boneless chicken
- 3 Quarts chicken stock
- 1 cup diced onion
- 1 cup dice celery
- 1 cup diced carrots
- 1/2 cup white rice
- 3/4 pound ground beef
- 1 teaspoon Garlic Italian seasoning
- 1 Egg
- Salt & Pepper
Directions:
- Cook the chicken and dice it
- Put the stock in a large pot
- Add carrots, celery & onion and bring to a boil
- In a separate bowl mix the ground beef with garlic Italian seasoning and the 1 egg
- Mix well
- Roll into 1/2 inch diameter meat balls and cook
- Add the rice to your stock pot
- When the rice and veggies are cooked add chicken and meat balls
- Add salt & pepper to taste
