Ron’s Italian Wedding Soup

Ingredients:

  • 1 pound boneless chicken
  • 3 Quarts chicken stock
  • 1 cup diced onion
  • 1 cup dice celery
  • 1 cup diced carrots
  • 1/2 cup white rice
  • 3/4 pound ground beef
  • 1 teaspoon Garlic Italian seasoning
  • 1 Egg
  • Salt & Pepper

Directions:

  • Cook the chicken and dice it
  • Put the stock in a large pot
  • Add carrots, celery & onion and bring to a boil
  • In a separate bowl mix the ground beef with garlic Italian seasoning and the 1 egg
  • Mix well
  • Roll into 1/2 inch diameter meat balls and cook
  • Add the rice to your stock pot
  • When the rice and veggies are cooked add chicken and meat balls
  • Add salt & pepper to taste
