ZESTY JICAMA SLAW 

This recipe is from the great cookbook Clean Start by Terry Walters

You can use a box grater – use the large holes.

  • 3 cups peeled and coarsely grated jicama
  • 1/3 cup plus 2 tablespoons minced fresh cilantro
  • 2 Tablespoons minced fresh mint
  • 2 teaspoons grated fresh ginger
  • 2 Tablespoons lemon juice
  • 2 Tablespoons lime Juice
  • Zest of 1 lime
  • ¼ teaspoon sea salt
  • Cayenne pepper to taste ( optional)

In a medium mixing bowl, combine jicama, cilantro and mint.  In separate bowl, which together ginger, lemon juice, lime juice and zest and salt with cayenne.  Pour over slaw, toss to combine and serve!
