The Claremont Diner Salad
This is a delicious salad that helped the Claremont Diner get so famous in Montclair/Verona NJ. When you sat down, each table had a metal bowl with the salad just as a welcoming gift. It is sweet and sour and addictive and fairly healthy. Kim grew up enjoying their delicious food. Sadly they closed years ago.
You must make this in advance so the flavors blend and the cabbage softens. Keeps very well in the refrigerator.
Serves 8
Dressing
- 2 tablespoons sugar
- 3 tablespoons vinegar
- 2 tablespoons vegetable oil
- 1 tablespoon water
- 1 teaspoon salt
Mix the above ingredients together to make the dressing
Veggies
- 1 cucumber sliced
- 1 carrot sliced
- 1 green pepper sliced
- 1 red onion shredded
- 1 small head of cabbage shredded
Pour the dressing on the vegetables in a big bowl or a large plastic food storage bag and let sit at room temp for 2 hours, then place the salad in the refrigerator overnight.
