I have been experimenting with these French onion soup dumplings.  The perfect bite of a bowl of the steaming melty cheesy deliciousness.  I wanted to copy something I had seen on TV.  This is my journey
Soup:  I started with Alton Browns French Onion soup recipe...*****. Cook the recipe down so it is really intense.
Ladle the soup into small “mini” muffin tins & freeze:

Lay out wonton wrappers and a biscuit cutter and cut 2 wonton rounds  for each “soup muffin”

Take muffin tin out of freezer, rinse the back  of tin with water to loosen the frozen cubes of soup.  Remove them using a fork at edges, they pop right out.  You must work fast or do a few and put it back to firm up.   Lay one “soup muffin” on the wonton

Pinch the wonton around the base of the “soup muffin”
Moisten the perimeter of your top wonton with your finger dipped in a small bowl of water.
Work fast and in batches.  Make sure there are no holes and then freeze or fry immediately.  If you freeze them in a baggie, make sure they don’t stick to each other before they freeze solid.  Lay them out freeze then put them in the baggie. If not it could be disaster.   These can be stored in freezer for months.
Deep fry until golden brown, I use grapeseed oil, but use your favorite flavorless frying oil.  Beware not to puncture them. Drain on paper towel when golden and put on tray for broiler.
tip use a splatter screen.  I love this sturdy All Clad I treated myself to.
Prepare cheeses and cocktail toasts.  I uses fontina and gruyere, but you can use your favorites.
Lay one dumpling on a cocktail toast and place cheese on top.  I used a slice of each. Broil until the cheese melts.  Watch carefully.
Then Enjoy… Beware they are hot, so eat carefully with napkins, forks and a plate.  They are even good when they are cooler.
Do you have any other variations on this them. I was thinking of marinara and sausage or pepperoni with mozzarella ball in the “soup muffin tins” deep fried with cheese melted on top and basil chopped on top.  Could be good.  Share your ideas.
