This is the most delicious dish, it is Chicken and Rice. It is a great dish for parties.
Kim’s Mom’s Chicken with Rice ( Arroz con Pollo)
Serves 4- 5 people
- 2 1/2 pound fryer, disjointed
- 2 teaspoons salt
- 1/4 Teaspoon freshly ground black pepper
- 1/2 cup olive oil
- 3/4 cup chopped onions
- 2 cloves garlic minced
- 1 green pepper chopped
- 1 cup canned tomatoes, drained and chop
- 1 teaspoon oregano
- 1 bay leaf
- 1 1/2 cup Chicken broth
- 1/4 teaspoon saffron or bijol
- 1 cup rice
- 1/2 cup french style peas ( canned LeSeur)
- 8 asparagus tips, cooked or canned
- 2 cans pimentos, cut julienne
- 1/2 cup of beer
- brown paper bag
Season the chicken with the salt and pepper, heat the oil in a casserole with lid, brown the chicken in it and remove. Add the onions, garlic and green pepper to the oil remaining in the casserole. Saute ten minutes, add the tomatoes, bay leaf, chicken broth, 1/2 of the beer and saffron. Bring to a boil and add rice and chicken. Lay the paper bag over the chicken and rice (this helps absorb the steam) and then put the cover on and bake in a 350 degree oven 45 minutes or until chicken and rice are tender. Watch carefully and add a little more beer as necessary ( add more if you like it soupy, like my dad). Taste for seasoning.
To serve, remove cover, sprinkle the peas over the top and arrange the asparagus and pimentos over them.
