This is a recipe that was given to me by a very dear person, Norma Schaffer. She is a fantastic cook. The simplicity of this recipe is amazing and it is delicious.
KIM’S BRISKET RECIPE
Preheat oven to 350 degrees or can be done on a cooktop or crockpot
- 1 First cut of brisket
- 6 large onions sliced
- Lawry’s seasoning salt
- Carrots & potatoes optional
DIRECTIONS
- Trim brisket of extra fat then sprinkle with lawry’s seasoning salt.
- In a roasting pan or dutch oven – heat to high and sear on all sides to seal in juices.
- Add onions under the brisket and over the top
- Seal with foil or the lid and bake at 350 degrees or on low heat for 2 hours
- When it still has a little give take the meat out and carve it into slices
- Puree the onions, add more water if it seems too thick
- Add carrots and cut up potatoes at this point and seal and put back into the oven for another hour or until melt in your mouth tender.
This freezes very well. I usually make a double batch then freeze it in casserole dish and when it is frozen, remove it from the dish and put the frozen block in a baggie, next time you want it, find the dish, put the block in the dish and bake until it is warmed through and through.
Makes a great brisket sandwich also.
