Prosciutto 
”Roller Coaster of Flavor”  Roll Ups
Makes 24

Ingredients:

  • 1 Tablespoon lemon Juice
  • 2 Teaspoons grated lemon Zest
  • 2 Tablespoons extra virgin olive oil
  • 6 ounces of soft room temperature goat cheese or mascarpone cheese
  • 2 cloves garlic minced
  • 12 slices of prosciutto cut in half ( Not sliced paper thin)  You could use ham or turkey
  • 1/2 cup fig preserve
  • 1/2 bunch baby arugula
  • Fresh ground black pepper

Directions:

1. Make a vinaigrette by adding
Zest,, lemon juice and mix it together with the oil. Put aside.
2. Mix the softened goat or mascarpone cheese with the minced garlic
3. Spread out the prosciutto then cut them in half.
4. Spread a thin layer of the cheese mixture over each prosciutto piec.
5. Next spread a thin layer of the fig preserve.
6. Make a neat  bundle of arugula on one end, spoon on some vinaigrette.
7. Sprinkle with ground pepper.
8  Roll tightly.

You can do variations on this theme doing a Caesar salad etc.  Use your imagination.  Enjoy!
