Ingredients
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 2 celery ribs, diced
  • 2 carrots, diced
  • 5 cloves garlic, minced
  • 2-3 tsp salt
  • 1-2 tsp black pepper
  • 4 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp ground cumin
  • 2 tbsp brown sugar
  • 2 tbsp chili powder
  • 1/2 tsp cayenne pepper
  • 2 tsp dried oregano
  • 1 tsp thyme
  • 1 tsp dried mustard
  • 1 bag dried lentils
  • 1 bay leaf
  • 2-1/2 quarts chicken broth
  • 1 pound ground turkey or ground beef

Preparation
  1. In a large pot, cook onion, bell pepper, jalapeno, celery, carrot, garlic, salt, and pepper for 6-8 minutes.
  2. Add raw meat to cooking veggies.
  3. Crumble th emeat and continue to cook it all until the meat is browned.
  4. In a separate bowl, combine the brown sugar, all remaining spices, and mustard.
  5. Add blended spices to the meat mixture in the pot.
  6. Stir and continue cooking for 4-5 minutes or until it becomes fragrant.
  7. Add dry lentils, bay lear, and chicken broth.
  8. Simmer, uncovered, stirring occasionally for 1 hour.
  9. Serve while hot.

Notes
You don't need to soak the lentils, just rinse them in a colander under running water.

Add more of the spices to your taste.

It looks like along list of ingredients, but it doesn't take long to prepare.

You can freeze the leftovers.

In addition to eating it, it's great sprinkled with cheese and eaten with tortilla chips. Yum!
