Ingredients
  • Bones from 1 roasted turkey
  • 5 cups diced turkey
  • 5 cups diced potatoes
  • 3 cups diced carrots
  • 1-3/4 cup diced onion
  • 1-1/2 cup diced celery
  • 2-3 cups uncooked long-grain rice
  • 1 can evaporated milk
  • 3 tbsp soy sauce
  • 1-1/2 tsp crushed garlic
  • 1/8 tsp ground red pepper
  • salt and pepper to taste
  • 1-2 tsp Wondra flour or cornstarch

Preparation
  1. Cover turkey bones with water (approximately 1.5 - 2 gallons) in a large pot.
  2. Bring water to a boil.
  3. Cover and reduce to simmer for approximately 2 hours.
  4. Remove turkey bones.
  5. Strain and remove any fat from broth.
  6. Return broth to a boil.
  7. Add diced vegetables and rice.
  8. Cover and reduce to simmer for 30 minutes, stirring occasionally.
  9. Add diced turkey, milk, soy sauce, garlic, red pepper, salt, and pepper.
  10. Add Wondra flour to thicken, as needed. (Or substitute cornstarch/water mixture.)

Notes
Ingredients are approximate. Adjust everything to your liking.

Instead of rice, you can use a bag or two of the frozen thick "homemade" egg noodles. Yum!

Fran's Turkey Chowder
Soup will thicken in the refrigerator overnight, so add water or chicken broth the following day to stretch it out.

You can freeze the chowder in gallon-size Ziploc baggies, if you do it before everyone eats it all!
