Ingredients
|
- Bones from 1 roasted turkey
- 5 cups diced turkey
- 5 cups diced potatoes
- 3 cups diced carrots
- 1-3/4 cup diced onion
- 1-1/2 cup diced celery
- 2-3 cups uncooked long-grain rice
- 1 can evaporated milk
- 3 tbsp soy sauce
- 1-1/2 tsp crushed garlic
- 1/8 tsp ground red pepper
- salt and pepper to taste
- 1-2 tsp Wondra flour or cornstarch

Preparation

- Cover turkey bones with water (approximately 1.5 - 2 gallons) in a large pot.
- Bring water to a boil.
- Cover and reduce to simmer for approximately 2 hours.
- Remove turkey bones.
- Strain and remove any fat from broth.
- Return broth to a boil.
- Add diced vegetables and rice.
- Cover and reduce to simmer for 30 minutes, stirring occasionally.
- Add diced turkey, milk, soy sauce, garlic, red pepper, salt, and pepper.
- Add Wondra flour to thicken, as needed. (Or substitute cornstarch/water mixture.)

|
Ingredients are approximate. Adjust everything to your liking.
Instead of rice, you can use a bag or two of the frozen thick "homemade" egg noodles. Yum!
