Ingredients
|
- 3 tbsp oil
- 1 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup sliced parsnips
- 1 cup sliced mushrooms
- 12 oz. salmon, cut into 1-inch cubes
- 1 tbs sherry or wine (optional)
- 1 tsp salt or your favorite seasonings
- 1/4 cup chopped herb blend (parsley, dill, basil)
- 2 cups cream soup (potato, mushroom, broccoli, or chicken) OR 2 cups vegetable broth

Preparation

- In a large saucepan, heat oil.
- Add onion, carrots, mushrooms, and parsnips.
- Saute until tender (about 5 minutes)
- Add soup base.
- Bring to boiling point.
- Add fish, wine, and seasonings.
- Reduce heat and simmer, covered.
- Simmer 15 minutes.
- Stir in herbs.
- Enjoy!
