Ingredients
  • 3 tbsp oil
  • 1 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup sliced parsnips
  • 1 cup sliced mushrooms
  • 12 oz. salmon, cut into 1-inch cubes
  • 1 tbs sherry or wine (optional)
  • 1 tsp salt or your favorite seasonings
  • 1/4 cup chopped herb blend (parsley, dill, basil)
  • 2 cups cream soup (potato, mushroom, broccoli, or chicken) OR 2 cups vegetable broth

Preparation
  1. In a large saucepan, heat oil.
  2. Add onion, carrots, mushrooms, and parsnips.
  3. Saute until tender (about 5 minutes)
  4. Add soup base.
  5. Bring to boiling point.
  6. Add fish, wine, and seasonings.
  7. Reduce heat and simmer, covered.
  8. Simmer 15 minutes.
  9. Stir in herbs.
  10. Enjoy!
