Ingredients

- 2 tbsp fresh orange juice
- 1 tbsp fresh lemon juice
- 1-1/2 tsp fresh lime juice
- 1-1/2 tsp minced shallot
- 1 tsp Dijon mustard
- 1/4 tsp finely grated lemon or orange zest
- 6 tbsp extra virgin olive oil
- salt to taste
- freshly ground pepper to taste

Preparation

- In small bowl, combine juices, shallot, mustard, and zest.
- In a thin, steady stream, whisk in olive oil until dressing thickens.
- Season to taste with salt and pepper.

Will keep tightly covered in refrigerator for up to 5 days.
Makes about 2/3 cup dressing.
