Mixed Citrus Vinaigrette - ideal with fish, vegetables, or tomatoes.
Ingredients
  • 2 tbsp fresh orange juice
  • 1 tbsp fresh lemon juice
  • 1-1/2 tsp fresh lime juice
  • 1-1/2 tsp minced shallot
  • 1 tsp Dijon mustard
  • 1/4 tsp finely grated lemon or orange zest
  • 6 tbsp extra virgin olive oil
  • salt to taste
  • freshly ground pepper to taste

Preparation
  1. In small bowl, combine juices, shallot, mustard, and zest.
  2. In a thin, steady stream, whisk in olive oil until dressing thickens.
  3. Season to taste with salt and pepper.

Notes
Will keep tightly covered in refrigerator for up to 5 days.

Makes about 2/3 cup dressing.

Perfect for greens, poached or grilled salmon, steamed or roasted vegetables, or sliced avocados or tomatoes.
