Ingredients
  • 2 large tortillas (Carolina's burrito size, if you can)
  • 1 bunch red chard or any chard, stripped from stem with leaves cut small
  • 2 tbsp virgina olive oil
  • 1 tbsp white vinegar
  • 1 tbsp sugar or honey
  • 1 tsp red pepper flakes
  • 3 slices bacon, cooked and diced
  • 2 cloves garlic, minced
  • 1/2 can sliced water chestnuts, drained
  • 3 tbsp diced parsley
  • 1 slice of cheese or 1/4 cup of your favorite grated cheese

Preparation
  1. Heat olive oil and saute garlic and bacon. Add chard after bacon begins to sizzle. Add vinegar and cook the chard down. Add sugar, pepper flakes, water chestnuts, and parsley.
  2. Spread out tortilla.
  3. Lay cheese in the center.
  4. Pour 1/2 chard mixture on top of cheese.
  5. Fold sides in to form a square pocket.
  6. Place in microwave for 45 seconds and ENJOY!

Notes

Also try them with wonton wrappers and fry them in the same pan or boil them and serve them with a great sauce.  Garlic-olive oil.
