Preparation
|
- Prepare piri piri sauce at least a week ahead.
- Prepare jicama orange salad and set aside.
- Sprinkle 1 tsp Southwest Seasoning onto each chicken breast, using your hands to coat all sides thoroughly.
- Heat 1 tbsp piri piri sauce in a large skillet over high heat.
- Add chicken and saute until brown (about 3 minutes on each side).
- Turn and cook for another 2 minutes.
- Remove from heat and remove chicken to serving plates.
- Heat remaining piri piri sauce in a small saucepan until hot and bubbling (about 2 minutes).
- Top each chicken breast with 3/4 cup of the jicama orange salad.
- Top each salad with 1-1/2 tbsp of the heated piri piri sauce.
