Piri Piri Chicken - a Portugeuse/African rendition of a creole dish
Ingredients

Preparation
  1. Prepare piri piri sauce at least a week ahead.
  2. Prepare jicama orange salad and set aside.
  3. Sprinkle 1 tsp Southwest Seasoning onto each chicken breast, using your hands to coat all sides thoroughly.
  4. Heat 1 tbsp piri piri sauce in a large skillet over high heat.
  5. Add chicken and saute until brown (about 3 minutes on each side).
  6. Turn and cook for another 2 minutes.
  7. Remove from heat and remove chicken to serving plates.
  8. Heat remaining piri piri sauce in a small saucepan until hot and bubbling (about 2 minutes).
  9. Top each chicken breast with 3/4 cup of the jicama orange salad.
  10. Top each salad with 1-1/2 tbsp of the heated piri piri sauce.
