Ingredients
  • 3 tbsp barbecue sauce
  • 4 small boneless, skinless chicken breasts halves
  • 2 small unpeeled red potatoes - thinly sliced
  • 1 red or green bell pepper - seeded and sliced
  • 1 green onion - finely chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1-1/2 cups shredded reduced-fat cheddar cheese

Preparation
  1. Preheat oven to 375 degrees.
  2. Arrange four sheets of aluminum foil (app. 12"x12" each) on counter.
  3. On each sheet spoon about 1 tsp of the barbecue sauce.
  4. Top with chicken breast.
  5. Spoon remaining sauce over chicken breasts.
  6. Arrange potatoes atop chicken.
  7. Arrange bell pepper atop potatoes.
  8. Arrange onion atop bell pepper.
  9. Sprinkle with salt and pepper.
  10. Seal each foil packet by folding in half and crimping sides closed.
  11. Place packets on baking sheet.
  12. Cook for 35 minutes.
  13. Open packets carefully using scissors (beware of escaping steam!).
  14. Sprinkle cheese atop each packet's food.
  15. Return to oven for 2 minutes or until cheese is melted.
  16. Use spatula to remove packet contents to serving plates or serve in packets for an easy clean up!

Notes
This recipe makes 4 servings.  Each serving has 290 calories and provides 20% of the daily value of calcium.
