Ingredients
  • 2 cups sifted flour
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 2 cups grated raw carrot
  • 1/2 cup Grapenuts cereal (not the flakes)
  • Glaze:
    • 1 tbsp butter, softened
    • 2 cups sifted powdered sugar
    • 1/3 cup orange juice
    • 1 tbsp grated orange peel

Preparation
  1. Preheat oven to 325 degrees.
  2. Sift together flour, baking powder, and salt.
  3. In large bowl, cream together shortening, butter, and sugar until light and fluffy.
  4. Add egg and vanilla, blending well.
  5. On low speed, beat in flour mixture.
  6. Beat in grated carrot and Grapenuts just until combined.
  7. Drop by tablespoonsful onto greased cookie sheets approximately 2 inches apart.
  8. Bake for 20-25 minutes.
  9. Remove cookies to rack.
  10. While cookies are cooling, prepare glaze by creaming together butter and powdered sugar. Add orange juice and orange peel. Blend well.
  11. Spread glaze over warm cookies.
