Ingredients

- 2 cups sifted flour
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup shortening
- 1/2 cup butter
- 3/4 cup sugar
- 1 egg
- 2 cups grated raw carrot
- 1/2 cup Grapenuts cereal (not the flakes)
- Glaze:
- 1 tbsp butter, softened
- 2 cups sifted powdered sugar
- 1/3 cup orange juice
- 1 tbsp grated orange peel

Preparation

- Preheat oven to 325 degrees.
- Sift together flour, baking powder, and salt.
- In large bowl, cream together shortening, butter, and sugar until light and fluffy.
- Add egg and vanilla, blending well.
- On low speed, beat in flour mixture.
- Beat in grated carrot and Grapenuts just until combined.
- Drop by tablespoonsful onto greased cookie sheets approximately 2 inches apart.
- Bake for 20-25 minutes.
- Remove cookies to rack.
- While cookies are cooling, prepare glaze by creaming together butter and powdered sugar. Add orange juice and orange peel. Blend well.
- Spread glaze over warm cookies.
