Raisins
3/4 cup raisins

3 tbsp orange juice or orange liqueur

1/2 cup butter or margerine, at room temperature

3/4 cup sugar

1 large egg

2 tsp grated orange peel

1 cup all-purpose flour

1 tsp baking soda

1-1/2 cup rolled oats

8-oz pkg white chocolate baking chips

1 tsp vegetable oil or shortening

In small bowl, combine orange juice and raisins.  Let stand overnight.

Preheat oven to 350 degrees.

In large mixing bowl, beat butter and sugar until fluffy. Beat in egg and orange peel.

In another bowl, combine flour and baking soda.  Stir into butter mixture. Add raisins and any soaking liquid. Add oats.  Stir well.

Drop by rounded teaspoonsful onto greased baking sheets, spacing 2 inches apart. Flatten slightly.

Bake 10-12 minutes. Transfer to racks and cool completely.

In small microwave-safe bowl, heat chocolate and oil 3-4 minutes on low power, stirring once. Let stand 2 minutes.  Stir until smooth. Dip one-third of each cookie into chocolate.  Set onto waxed paper. Chill until chocolate is firm.

Makes about 3 dozen.
