Scrambled Egg and Mozzarella Breakfast Pizza courtesy of the United Dairy Council of Arizona
Ingredients
  • 1 whole wheat English muffin
  • 2 mushrooms - sliced
  • 2 green onions - finely chopped
  • 4 tbsp diced red or green bell pepper
  • 1/2 cup egg substitute
  • 1/4 tsp pepper
  • 1/8 tsp oregano or Italian seasoning
  • 4 tsp pizza sauce
  • 1/2 cup shredded, low-moisture, part-skim mozzarella cheese

Preparation
  1. Preheat oven to 350 degrees.
  2. Split muffin and toast.
  3. Set aside.
  4. Heat a small non-stick skillet over medium heat.
  5. Add mushrooms, green onions, and bell pepper.
  6. Cook, stirring constantly, for 2 minutes or until vegetables are softened.
  7. Stir in egg substitute, pepper, and oregano.
  8. Continue to cook until egg is set (about 2 minutes).
  9. Spread 2 tsp of pizza sauce onto each English muffin half.
  10. Spoon egg mixture over pizza sauce.
  11. Top with cheese.
  12. Place muffins on baking sheet.
  13. Bake for 5 minutes or until cheese is melted.

Notes
This recipe makes 2 servings with 190 calories each and 30% of the daily value of calcium.
