"My husband called in last week and talked to you about the Irish Soda Bread I've been making for 38 years. The recipe was given to me by a very dear friend in Connecticut who has since passed away. I make 10-12 loaves every Christmas to give away to friends, and I always think of her.  I hope you enjoy it." Thanks to Carol D. of Gold Canyon, AZ
Ingredients
  • 2-1/2 cups flour
  • 1/2 cup sugar
  • 1-1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup butter, softened
  • 1-1/4 cup seedless raisins, rinsed
  • 1-1/2 tbsp caraway seeds
  • 1-1/4 cup buttermilk

Preparation
  1. Preheat oven to 350 degrees.
  2. Grease loaf pan.
  3. Blend all ingredients until mixture is moistened throughout.
  4. Dump mixture into greased loaf pan (mixture will be thick).
  5. Bake for one hour or until toothpick inserted in center comes out clean.
  6. Cool in pan for 10 minutes.
  7. Turn out onto cooling rack.
  8. Slice when cooled.
