Black Bean Hummus from the Herb Lady
Ingredients
  • 1 can black beans, drained with liquid reserved
  • zest of 1 lime
  • juice of 1 lime (or to taste)
  • 1/4 tsp cumin
  • 1/4 tsp coriander (or 1+ tbsp fresh cilantro)
  • 4 peppercorns, ground
  • 1 tbsp dried epazote (or leaves from 4-5 sprigs of fresh epazote)
  • 10 green olives, pitted
  • 2-7 tbsp reserved bean liquid
  • tortilla or colorful root chips

Preparation
  1. Grind up everything except chips, 3 beans, and a bit of the epazote.
  2. Add the bean liquid until you achieve the desired consistency.
  3. Pour bean mix into a bowl.
  4. Garnish with beans centered, sprinkled with epazote, and arrange chips around bowl.
