Kathy from Rio Verde called and told us that she always buys lots of potatoes, sometimes 80 pounds worth.  She cooks them up and freezes them.  Especially her mashed potatoes.  I have tried freezing mashed potatoes with no success, so she shared her secret.  I will follow this easy method

Benefits to her method: The potato do not boil so they don’t absorb the water which robs it of it’s  nutrients.  It also freezes with out defrosting in a watery state.

Kathy steams the potatoes by cutting them up in small pieces then putting a small amount of water on the bottom of the pot,cover, bring it up to simmer, then reduce the heat and steam until the water is gone, approx. 10 minutes, there should be no more water, then add your other ingredients (sour cream, butter etc.) and mash.  Freeze in batches.
